A large batch of carefully selected seafood is placed inside a container filled with a soup base made of animal ingredients including pork bones and chicken bones, simmered to the maximum over high heat, then various vegetables are added along with a tasty and special soy sauce to create an extremely rich soup.
And above all, the secret to maximizing the flavor is to ensure it is made carefully with all our heart and soul put into the process.

Noodles: Fresh noodles made in-house
Our fresh noodles are made in-house using flavorful Japanese wheat from Hokkaido.
Our homemade noodles have a unique, chewy, and smooth texture that brings out the wheat’s delicious flavor.
We especially recommend our hot, cauldron-boiled Kamaage Atsumori noodles.
Katsuobushi (bonito flakes): Freshly cut “melting katsuobushi”
Gyoku’s ramen and tsukemen (cold noodles for dipping) are topped with plenty of freshly cut katsuobushi (bonito flakes).
We use the finest aged katsuobushi from Ibusuki, Kagoshima prefecture called “Ipponzuri katsuo honkarebushi”. Once we receive your order, we prepare fresh katsuobushi using our special made-to-order katsuobushi cutter. Enjoy the unique texture of our “melting katsuobushi” made possible by cutting it to an ultra-thin 0.01mm.
